DIRECTIONS: Using a large sauce pan of water boil the carrots until tender crisp & then drain well. Return carrots to the pan, add butter & minced mint & cook over medium-low heat stirring until the butter is melted & carrots are coated, about 5 minutes. Serve with additional mint leaves.
