INGREDIENTS:
 | 1/2 cup toasted walnuts |
 | 2 Tbsp apple cider vinegar |
 | 4 Tbsp walnut oil (use olive or vegetable oil if
walnut oil is not available) |
 | 4 oz (about 1 cup) crumbled blue cheese |
 | 1 shallot, minced |
 | Salt & pepper to taste |
 | 5 medium-large apples (Fuji, Gala, Braeburn or
Jonathan |
 | Mixed greens to taste (romaine, spinach, or
packaged "European" blend |
DIRECTIONS: Using a large bowl combine
vinegar, oil, cheese, shallot, salt & pepper. Stir well to
combine. Core apples & cut into 1/2 inch pieces adding them to the
dressing mixture, stir to coat well. Arrange salad greens on salad plates
& spoon the apple mixture, topping with the walnuts.
