Independence Day, the 4th of July, is America's birthday. Where we became a free & separate country. Many men & women died to make this country free. The continental army was small & lacked proper tools for war, but they fought & suffered so that we, today's Americans became the "winners". This "property" became free & the people declared it the United States of America. Since 1776 many men & women have given their lives or suffered horrible wounds from the hazards of war to keep it that way, to preserve our freedom. Others can rewrite history all they want, but the fact exists, the USA is a free country, we did the best we could at the time & we intend to keep doing the best we can. This holiday has become a holiday from work, lots of fireworks, outdoor cooking & sports. There is much more involved. This is a time where family & friends gather, have the food ready, the ball game is on, but we must first stand in front of the flag, proudly displayed above our front entrance & recite our pledge of allegiance, rededicate our life to protect & defend this country. In my case here in the desert there is a lot of heat, blowing sand, cactus, etc., BUT IS FREE DESERT. Before you dig into the food, remember why you have the day off. Some suggested recipes might be: GAZPACHO SOUP or perhaps CHILLED PEA SOUP to go with your choice of SPARERIBS, COWBOY KABOBS or BARBECUED CHICKEN or even STEAK TARRAGON, of course we must always have CHILI 1 and BAKED BEANS and a good salad is always welcome, maybe even a couple of salads such as COACHELLA SLAW, SUMMER SALAD and why not Of course you need some potato so why not STUFFED BAKED POTATO followed with your choice (or both) of STRAWBERRY ICE CREAM & MAYONNAISE CAKE of course you need RASPBERRY PUNCH and LEMONADE "AS THICK AS HASTY PUDDING......" In British English (& 18th century America) "pudding" commonly means a hot dessert made with pastry, bread or rice & often fruit. This recipe comes from 1742: Break an egg into fine flour, & with your hand work up as much as you can into as stiff a paste as possible. Add milk boiling & put in a little salt, some rose water, or orange-flower water, a few drops put to your taste, some butter & keep stirring all one way till it is thick as you would have it, pour it out & when it is in the dish stick it all over with little bits of butter & beat cinnamon over.
