Fish Tacos
INGREDIENTS:
12 Corn tortillas, steamed
1 Tbsp fresh lime juice
4 large boneless, skinless fish fillets (fish that cooks white, snapper, cod, etc)
6 green onions, chopped
2 canned chipotle chilies, chopped
3 cups watercress, torn into
3 cup CITRUS SALSA
3 Tbsp oil Salt & pepper to taste
DIRECTIONS: Season fish with salt, pepper & lime juice. Heat oil in a large skillet & sauté onions for 1 minute. Add fish & sauté until cooked, about 3 minutes. Stir in chilies. Serve in bowls with fish mixture, salsa & watercress so everyone can build there own tacos.
SERVINGS: 6 TIME: 20 minutes
SERVING TIPS: Try adding shredded lettuce before the salsa & maybe add some cumin to the fish & lime juice.
